Raya is just a day away and we’re extremely excited to be celebrating Raya in the comfort of our homes! While Hari Raya feels a little different this year, it is undeniable that this festive occasion still deserves a celebration.

As we continue to stay safe at home, we’ve found 10 best, and super delicious Raya food recipes that we think you and your family will love for Hari Raya 2020!

1. Tepung Pelita

Ingredients:

Bottom Layer

  • 1 cup rice flour
  • 1 cup sugar
  • 1/2 cup pandan water
  • 5 cups water
  • Green Colouring

Bottom Layer

  • 1 cup rice flour
  • 3 cups coconut milk
  • 3 cups water
  • 1 tbsp sugar
  • Pandan leaf
  • Salt

Steps:

  1. Combine all ingredients and stir well.
  2. Then, continuously stir the ingredients over medium heat.
  3. When the mixture starts to thicken, turn to low heat and continue stirring until the dough becomes glossy and bubbly.
  4. Pour the mixture into small containers while hot.
  5. Mix all ingredients together and then cook on low heat.
  6. After the cooking has finished, pour the mixture right away into each of the containers that contain the bottom layer mixture.
  7. Wait until it is completely cool and serve it.

2. Delicious Ondeh-Ondeh Balls with Gula Melaka

Ingredients:

  • 250g glutinous rice flour
  • 100g grated coconut
  • 150g Gula Melaka, finely chopped
  • 200ml pandan juice
  • 1 pinch sea salt

Steps:

  1. Combine glutinous rice flour with pandan juice* and knead lightly.
  2. Pinch a small piece of the dough and place in boiling water.
  3. When the dough rises (or floats), remove it with a spoon and shake off the excess water.
  4. Mix it back into the main dough and knead well together.
  5. Cover the dough and set aside for 15 minutes.
  6. Mix the grated coconut with a pinch of salt and steam for about 2-3 minutes.
  7. Let the steamed grated coconut cool completely.
  8. Pinch the dough into small pieces of dough (~15g each) and flatten it.
  9. Fill the center of the dough with palm sugar.
  10. Roll it with your palms to form a smooth ball.
  11. Repeat until all ingredients are used up.
  12. Bring a pot of water to boil.
  13. Cook the ondeh-ondeh balls in boiling water.
  14. When the balls rises, remove with a slotted spoon and drain off the excess water.
  15. Coat the ondeh-ondeh balls with grated coconut and serve immediately!

 

3. Traditional Kuih Semparit

Ingredients:

  • 170g unsalted butter
  • 140g castor sugar
  • 300g plain flour
  • 40g custard powder
  • 1 tsp vanilla essence
  • 1 egg yolk
  • Glazed red cherries or any preferred topping for decoration

Steps:

  1. Using an electric mixed (with the paddle attachment), cream butter and caster sugar on medium speed until light and fluffy.
  2. Add egg yolk and vanilla essence.
  3. In a separate mixing bowl, combine flour and custard powder.
  4. Then, slowly add about 3/4 of the flour mixture to the butter mixture.
  5. Fold together to form a soft dough.
  6. Fill the dough into a flower semperit maker.
  7. Squeeze gently to create a dahlia-shaped flower.
  8. Place a tiny piece of cherry (or any preferred topping) in the centre of the flower.
  9. Continue until dough is used up.
  10. Preheat oven at 180°C and bake for about 20 minutes or until lightly browned.

 

4. Kuih Bangkit Cheese

Ingredients

  • 3 cups of tapioca flour
  • 3 cups of corn flour
  • 1 block of butter
  • 250g of cream cheese
  • 1 block of cheddar cheese
  • 1 cup of fine granulated sugar
  • 2 egg yolks
  • 1 tsp baking powder
  • 1 tsp vanilla essence

Steps:

  1. Mix tapioca flour, corn flour and baking powder in a bowl and leave aside.
  2. Using a mixer, mix butter and sugar until light and fluffy.
  3. Then, add egg yolks, cream cheese and vanilla essence and beat till soft peaks form.
  4. Next, add in the mixed flour (from Step 1) portion by portion, and mix till a dough is formed.
  5. Knead the dough together until it doesn’t stick to your palms.
  6. Grate cheddar cheese and mix with the dough, then set aside the dough.
  7. Using a round cutter, cut circles from the dough.
  8. Preheat oven to 170°C and bake the cookies for around 30 minutes, or till golden-yellow.

 

5. Purple Sweet Potato Kuih Seri Muka

Ingredients:

Glutinous Rice Layer

  • 300g glutinous rice (washed and soaked overnight)
  • 150ml thick coconut milk
  • 50ml warm water
  • 3/4 tsp salt
  • 1 1/2 tbsp sugar
  • 4 pandan leaves

Purple Sweet Potato Custard Layer

  • 150g smashed purple sweet potato
  • 70ml water
  • 200ml thick coconut milk
  • 60g low protein flour
  • 20g rice flour
  • 20g corn flour
  • 2 large eggs
  • 110g sugar

Steps:

Glutinous Rice Layer

  1. Wash the glutinous rice and soak overnight.
  2. When ready, drain off the excess water and pour the glutinous rice into an 8-inch square tin.
  3. Mix coconut milk, water, salt and sugar.
  4. Pour into the square tin and mix together with the glutinous rice.
  5. Add pandan leaves.
  6. Steam on medium heat for approximately 20 minutes, then stir the mixture before steaming for another 10 minutes.
  7. Remove the pandan leaves.
  8. Using a spoon, level the steam glutinous rice before pressing down with a heavy object.

Purple Sweet Potato Custard Later

  1. Steam sweet potato till soft, then remove skin and mash with a fork till smooth.
  2. Mix the sweet potato mash with other ingredients, excluding eggs and sugar. Then strain the mixture.
  3. In a separate bowl, ,mix sugar and eggs together.
  4. Combine sugar and eggs with the sweet potato mixture and cook on low heat.
  5. Stir continuously until the mixture thickens, then pour atop the glutinous rice layer.
  6. Steam on low heat for 35-40 minutes.

Ingredients

  • 1 cup wheat flour
  • 1 cup evaporated milk
  • 2 tbsp sugar
  • 2 eggs
  • 1/2 cup condensed milk
  • 1 cup water
  • 6 tbsp margarine
  • 2 tbsp custard flour
  • 1/2 tsp salt
  • 1/2 tsp vanilla essence
  • Sesame seeds

Steps:

  1. In a bowl, mix together wheat flour, evaporated milk, condensed milk, sugar and eggs, and whisk it well.
  2. In a pan, mix water, margarine, custard flour, salt and vanilla essence and put on low heat.
  3. Stir until the mixture is sticky and then pour in the mixture from step 1 into the pan.
  4. Mix until the mixture becomes clumpy and then turn off the heat.
  5. In a glass tray, spread margarine evenly.
  6. Then, pour the mixture in.
  7. Sprinkle some sesame seeds on tops and bake at 180°C for 40 minutes.
  8. Then leave it to cool completely before cutting and serving.

 

7. Batik Cake

Ingredients:

  • 450g biscuit marie
  • 250g butter
  • 1 cup milo (110g)
  • ¾ cup sweet condensed milk (190ml@250g)
  • ½ cup cocoa powder
  • ½ boiled water (60ml@50g)
  • 1 tsp vanilla extract

Cream cheese layer

  • 250 gram cream cheese
  • 150ml whipping cream
  • 1 tsp gelatin + (¼ cup boiled water @ 50ml)
  • 3 tbsp caster sugar
  • 1 tbsp condensed milk
  • 1 tsp vanilla extract

Chocolate layer

  • 300g milk compound coins
  • 150ml whipping cream
  • 1 tbsp butter

Steps:

  1. In a bowl, break up Marie biscuits into smaller pieces.
  2. In a pan, melt butter on low heat. Then, add condensed milk, milo powder and cocoa powder and stir till combined.
  3. Next, add vanilla essence and water and stir.
  4. Then, turn up to medium heat and add Marie biscuits. Mix together until the Marie biscuits are well coated with the chocolate sauce.
  5. Line the baking tray with parchment paper and pour the Marie biscuits inside. Refrigerate for 20 minutes.

Cream cheese layer

  1. In a cup, mix hot water and gelatin together.
  2. Using an electric mixer, mix cream cheese, whipping cream, caster sugar, condensed milk and vanilla essence until combined.
  3. Then, add the hot water and gelatin mixture and blend till smooth.
  4. Then pour over the refrigerated cookie base and place it in the fridge for another 20 minutes.

Chocolate layer

  1. In a sauce pan, bring whipping cream to a simmer.
  2. Then, pour over the bowl of milk compound chocolate coins with butter.
  3. Mix together until the chocolate is fully melted and smooth.
  4. Then, pour over the refrigerate base, and place it back in the fridge for 5 – 6 hours.

 

8. Shepherd’s Pie

Ingredients 

  • Corned Beef (diced)
  • Holland Onion (diced)
  • Sausage (sliced)
  • Carrot (sliced)
  • Chili Padi (sliced)
  • Potato (cooked and finely mashed)
  • Cheese
  • Powdered milk
  • Salt

Ingredients (White Sauce)

  • Butter
  • Cheese
  • 150ml full cream milk
  • 2 tbsp wheat flour

Steps:

White Sauce

  1. In a pan, melt the butter. Then, add wheat flour, full cream milk and cheese to the melted butter.
  2. Stir well and bring to a simmer. Then, set it aside.
  3. In a separate pan, stir-fry holland onion, carrot, sausage and chili padi. Season with salt, sugar and white pepper.
  4. Then, add corned beef and the white sauce from step 1. Cook for at least 3 minutes.
  5. Then, combine mashed potato, cheese and powdered milk in a bowl and mix till combined.
  6. Add peas to the beef mixture and mix well.
  7. Then, pour the mixture into small aluminium foil tray.
  8. Cover with the mashed potato mixture and use a fork to make shallow furrows.
  9. Bake at 180°C for 25-35 minutes until the mashed potato turns light golden brown in colour.
  10. Let it cool before serving.

 

9. German Butter Cookies

Ingredients 

  • 250g pure butter – room temperature
  • 80g Icing sugar – sifted
  • 250g potato starch
  • 160g cake flour
  • 1 tsp vanilla extract
  • Food coloring

Steps:

  1. Preheat the oven at 160°C
  2. Sift cake flour and potato starch and set aside.
  3. In another bowl, beat butter and icing sugar using a mixer until light and fluffy.
  4. Then, add in the dry ingredients and fold in with a spatula.
  5. Divide the dough into several portions and place a few colors and flavors, mixing well to get the desired color.
  6. Then, place each portion of dough in a bowl and wrap in plastic wrap. Refrigerate for 30 minutes.
  7. Next, remove the dough and divide into small portions. Arrange evenly on a baking tray and use a fork to press a pattern into the dough.
  8. Bake in the oven for 15 minutes but make sure the cookies do not bake until brown.
  9. Let it cool down before serving.

 

10. Pandan Muffin Recipe

Ingredients:

  • 1 1/2 cup of milk,
  • 1 cup melted butter
  • 3/4 cup sugar
  • 1 egg
  • 1/4 tsp pandan flavouring
  • 2 cups wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda

Steps

  1. Blend milk, melted butter, sugar, egg and pandan flavouring together.
  2. Then mix wheat flour, baking powder and baking soda together in a separate bowl.
  3. Add the two mixtures together and mix till smooth.
  4. Scoop in the batter into paper cupcake holders, filling about 3/4 of it.
  5. Pre-heat the air fryer to 150°C for 3 minutes.
  6. Cook it for 15 minutes
